02 - 2 tbsp olive oil
03 - 2 tsp chopped fresh rosemary
04 - 2 tsp chopped fresh thyme
05 - 1 tsp minced garlic
06 - 1 tsp kosher salt
07 - 0.5 tsp freshly ground black pepper
→ Vegetables
08 - 1 lb brussel sprouts, trimmed and halved
09 - 1 tbsp olive oil
10 - 0.5 tsp kosher salt
11 - 0.25 tsp freshly ground black pepper
# Directions:
01 - Combine olive oil, rosemary, thyme, garlic, salt, and black pepper in a small bowl to form a paste.
02 - Pat pork loin dry with paper towels. Rub herb paste evenly over the entire surface.
03 - Toss brussel sprouts with olive oil, salt, and black pepper until well coated.
04 - Arrange pork loin on a rimmed baking sheet. Scatter brussel sprouts around the pork. Roast in a preheated oven at 400°F for 35-40 minutes, or until the pork reaches an internal temperature of 145°F.
05 - Transfer pork to a cutting board and let rest for 10 minutes before slicing.
06 - Arrange sliced pork on a serving platter with crispy brussel sprouts alongside.
