07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 2 to 3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, for example strawberries or raspberries, lightly crushed
11 - 1 cup freeze-dried candy such as Skittles or marshmallows, crushed or chopped
# Directions:
01 - Line an 8x8-inch baking pan with parchment paper, ensuring all sides are covered.
02 - In a large mixing bowl, combine rolled oats, almond or peanut butter, honey or maple syrup, melted unsalted butter, vanilla extract, and a pinch of salt. Mix until thoroughly incorporated, then firmly press the mixture into the prepared pan. Refrigerate the base while preparing the gummies.
03 - Pour fruit juice into a small saucepan and sprinkle unflavored gelatin over the surface. Allow to sit for 5 minutes. Gently heat over low, stirring constantly until gelatin has dissolved. Stir in honey or agave syrup. Pour mixture into a parchment-lined small baking dish. Chill for 45 to 60 minutes until firm.
04 - Once set, slice gummies into small, uniform cubes.
05 - Remove the oat base from the refrigerator. Evenly distribute gummy cubes, lightly crushed freeze-dried fruit, and chopped freeze-dried candy over the surface. Press toppings gently into the base.
06 - Return the pan to the refrigerator and chill for an additional 10 to 15 minutes to allow toppings to set.
07 - Remove the mixture from the pan by lifting the parchment paper. Using a sharp knife, cut into bars of equal size.
